A couple of weeks ago I was hosting a macaron class for a wonderful corporate group, and whilst the macarons were baking we were all chatting about what we like to make and one of the bakers asked me what do I love to bake?
As silly as it may sound I found it really hard to decide, and I gave it loads of thought, and it made me realise that I have loads of things I love to bake, and a lot will depend on the mood I am in, so I thought I’d share my top 3 favourites with you and my why’s…
If you know me, you will know I am methodical, a stickler for detail and patient, so these are right up my street. I love the method you have to use to make croissant and Danish pastry dough, I find it fascinating how by making your own dough and then carefully rolling and folding you can make wonderful layers in the dough that when baked rise and create such deliciousness that is way better than you get in supermarkets. These are not something you would rush, but they are so worth the effort. It’s probably for this reason I’ve had to include these in my in person classes not only as a class, but you would enjoy these on arrival with a fabulous coffee.
Now there are 2 reasons for these, firstly I have the most wonderful memories of baking cupcakes with my nephews when they used to stay with me many many years ago. They would have been so young, but we would always bake cupcakes together, and it’s a memory I will always treasure. Secondly cupcakes are so quick and easy to make that if I ever need something in a hurry they are my go-to cake, plus who doesn’t love a cupcake.
I can’t deny last year I fell out with a fair few macarons, trying shed loads of recipes until I found the perfect one and to say that my most popular class has been for macarons is awesome. I’ve taught individuals and teams how to make these, and we have had laughs along the way and these little delights are always a crowd pleaser. I love how a different flavour, colour or decoration can transform these into something truly special.
