Raspberry, Almond & Oat Bites Recipe – Gluten Free Option

Are you looking for a quick and easy snack that can be made gluten free? Maybe its a packed lunch snack or something different for breakfast?

This month I am starting on a food transformation programme that lasts for 5 weeks and one of the things that I need to omit from my diet is gluten, so my gluten-free bread class couldn’t have come at a better time.  I will be playing with lots more gluten-free recipes to ensure I stay interested and still have homemade, so watch this space…

Raspberry, Almond & Oat Bites Recipe – Gluten Free Option

Prep Time 20 minutes
Cook Time 20 minutes

Ingredients

  • 100 grams fresh raspberries (frozen raspberries defrosted also works)
  • 50 grams real honey
  • 50 grams coconut oil (you can use all honey instead if you don't have coconut oil)
  • 100 grams Quaker Oats (I used gluten-free Quaker Oats for the gluten-free version)
  • 50 grams flaked almonds
  • 50 grams raisins
  • 25 grams ground almonds (if you don't have these replace with extra oats)

Instructions

  • Preheat the oven to 160 degrees fan oven and line a baking tray with baking parchment.
  • In a saucepan mash the raspberries to release the juice and simmer for 5 minutes until really soft.
  • Add in the honey and coconut oil and mix until fully combined and the oil has melted, then remove from the heat. In another bowl mix all the other ingredients. Add the liquid to the dry ingredients and mix until fully combined.
  • Then divide into small balls (I used a small ice cream scoop to get the same size then rolled each in my hand to get them smooth.)
  • Place each ball onto the baking tray and bake for 20 minutes. These are soft in the middle and will last in an airtight container in the fridge for at last 5 days.

Notes

If you don’t like almonds or raisins then feel free to add in an alternative you do like. If you want to adapt it and unsure what to replace please feel free to email to ask.  The recipe is so easy to adapt, and I’d love to know if you try them or if there’s something you would love to make that is gluten-free.
