If you are looking for a festive bake that’s simple to make this may just be what you need. Making a loaf cake to me always seems an easier option and sliced with a cup of tea is just perfect.
Marzipan & Cranberry Loaf Cake Recipe
Prep Time 15 minutes mins
Cook Time 40 minutes mins
Ingredients
- 140 grams unsalted softened butter
- 65 grams caster sugar
- 75 grams marzipan grated
- 2 large free-range eggs (room temperature)
- 140 grams self-raising flour
- 75 grams dried cranberries
- 2 tsp almond extract (if you like a lot of almond add in 3 teaspoons)
- 2 tbsp whole milk
- 15 grams flaked almonds (optional)
- Icing sugar for the dusting (optional)
Instructions
- Preheat the oven to 160 fan oven.
- In a mixing bowl beat the butter and sugar together until light in colour and creamy. Add in the grated marzipan and mix well until fully combined. In a jug, beat the eggs until combined and add to the butter mixture gradually (in 3 stages), mixing well after each addition.
- Then sift in the flour and gently combine. Add in the almond extract.
- Add in the dried cranberries and mix gently, only until combined. Scrape the mixture into your loaf tin that has been lined with baking paper and spread evenly so that the surface is flat. Sprinkle over the flaked almonds.
- Place in a pre-heated oven and baked for 35-40 minutes, until it is golden brown and when a skewer that's been inserted into the middle comes out clean.
- Put on a cooling rack and leave to cool down before dusting with icing sugar.
Enjoy every mouthful xxx
