Easy Maple Syrup & Nut Granola

Over the past 6 months I have been adapting recipes to keep me healthy whilst training for the London Marathon and this easy to make healthy granola has been one of my go to foods. You can adapt the nuts to ones you prefer or what’s in your food cupboard and making it in batches definitely works out better value than shop bought varieties.

Easy Maple Syrup & Nut Granola

Prep Time 5 minutes
Cook Time 40 minutes

Equipment

  • 1 large baking tray or 2 smaller trays
  • 1 mixing bowl

Ingredients

  • 300 g Jumbo rolled oats
  • 125 ml Maple Syrup to coat oats for first bake
  • 50 g Sunflower seeds
  • 50 g Brazil nuts chopped into smaller chunks
  • 50 g Almonds (flaked or chopped)
  • 25 ml Maple syrup to coat nuts & seeds (see notes below)

Instructions

  • Heat oven to 130 degrees fan oven.
  • Add 125ml of the maple syrup and the oats into a bowl and stir until the oats are fully covered with the maple syrup.
  • Take a baking tray covered in baking parchment or silicone mat and spread the coated oats onto the tray.
  • Bake in the oven for 15 minutes, then take out and give it a good mix, we are trying to ensure that the oats on the edge don't burn and that the oats get evenly baked. Put back in the oven for a further 10 minutes.
  • Add all of the nuts and seeds to your mixing bowl and add the remaining 25ml of maple syrup to coat them.
  • After the oats have baked for 20 minutes then tip the coated nuts and seeds onto the tray and mix together with the oats. Bake for 15 minutes.
  • Then take the tray out of the oven and set aside until cold.
  • Store in an airtight container in the cupboard.

Notes

These should keep in the airtight container for at least 3 weeks.
Just adapt the nuts and seeds to suit your preference, it would work wonderfully with pecans and hazelnuts.
