Easy Blackcurrant & Honey Compote

I’m becoming a real fan of compote to go with my granola and having an abundance of blackcurrants this year meant I just had to make some compote. I’ve also used this compote as the topping for my vanilla no bake cheesecake, so if you fancy making a bigger batch then it goes perfectly with cheesecake!

Just 2 ingredients (or 3 if you include tap water) and ready in under 10 minutes! Let me know what you think if you try it!

Easy Blackcurrant & Honey Compote

Cook Time 10 minutes

Equipment

  • 1 medium saucepan

Ingredients

  • 250 g blackcurrants washed and stalks removed
  • 40 g runny honey
  • 40 g water

Instructions

  • Put all the ingredients into a medium sized saucepan, stir together, and put on the saucepan lid.
On a medium high heat simmer for 8 minutes, stirring occasionally to stop it from sticking.
  • Then leave the lid off and simmer for 2 more minutes, the water should have disappeared and it should be thicker in consistency.
When ready transfer to a bowl to cool down.
  • Once cool store the fridge in an airtight container for about a week (I store mine in a jam jar!).

Notes

I used my own blackcurrants so they pack one hell of a punch with flavour and tantalising on the tastebuds plus they are packed with vitamins so a win win in my books. It’s absolutely amazing on my homemade granola!
